Healthy Breakfast Sliders with Scrambled Eggs, Avocado Spread, and Beet Spirals
Is My Breakfast Too Fancy? I’m worth it and it tastes so good.





Ingredients:
Serves 1-2
- 2 whole slider rolls spread with butter or olive oil and toast in a skillet
- 2 large eggs
- 1/4 cup shredded cheddar jack cheese
- 1 Tablespoon premade avocado spread (store-bought is good for convenience)
- 1 small tomato, 2 slices
- everything seasoning to taste ( I added to my eggs)
- Olive oil or cooking spray
- 1 cup beet spirals
- Air-fried beet spirals
You can find pre-made or make your own by using a spiral cutting machine and air frying until crispy)
Instructions:
1. Prepare the Ingredients:
Scrambled Eggs: In a bowl, whisk the eggs until well combined. Season with a pinch of salt and pepper.
Tomato: Slice the tomato into thin rounds.
Beet Spirals: If using pre-made beet spirals, skip this step. If making your own, use a spiral maker. Toss them in a bit of olive oil and air fry until crispy.
2. Cook the Eggs:
Heat a non-stick skillet over medium heat. You can lightly grease the skillet with cooking spray or a small amount of olive oil.
Pour the whisked eggs into the skillet and gently scramble them until cooked to your desired level of doneness. Top with cheese and everything seasoning. Remove from heat. Fold and portion into two servings to top on the rolls.
3. Assemble the Sliders:
Slice the slider rolls in half horizontally. I toasted mine in a pan with butter.
Spread a layer of avocado spread on the bottom half of each slider roll.
4. Layer the Ingredients:
On top of the avocado spread, add a portion of scrambled eggs to each slider roll.
Add a couple of tomato slices.
5. Add Beet Spirals:
Place a small handful of air-fried beet spirals on top of the tomato slices.
6. Top and Serve:
Place the top half of the slider roll on each assembled slider.
Secure the sliders with toothpicks if needed.
Serve the healthy breakfast sliders immediately.
