Bacon, sausage, all kinds of veggies, or different cheeses. Customize it to your liking
No rules here just slap something between a couple of tortillas and you are good to go. I added some information on homemade corn tortillas if the time allows they are amazing and fun to make.

Breakfast Quesadilla Recipe
Ingredients:
Serves 2-4
- 4 eggs
- 1/4 cup milk
- 4 tortillas
- 2 cloves chopped garlic
- 1/2 zucchini diced
- 1 cup baby spinach
- 1/2 jalapeno chopped fine
- 1/4 red onion chopped
- 1 tbsp. olive oil
- 1/4 cup shredded cheddar or Monterey jack
- Avocado, green onion, sour cream, hot sauce, lime as needed to garnish.
Directions
In a nonstick pan cook onion, garlic, jalapenos, and zucchini in olive oil.
In a mixing bowl scramble eggs and milk.
Add the scrambled eggs and cook until done. Fold in cheese and baby spinach. Season with kosher salt.
Butter two tortillas. Place one tortilla butter side down in a nonstick pan top with egg and top with the other buttered tortilla. Flip the quesadilla after about a minute when you see it is golden brown. Cook the other side the same way.
Remove from pan and cut into quarters.
Serve with avocado, sour cream, lime, and hot sauce. Salsa goes great as well.
