Southwestern Chipotle Turkey Chili
- 1 lb ground turkey cooked and strained
- 3 cloves gloves of garlic (minced.)
- 1 each green pepper diced
- 1/2 each cup of celery diced
- 1 each small red onion chopped
- 1 cup chopped mushroom
- 4 oz Chipotle peppers and sauce
- 11/2 cups chicken stock
- 1 lg large can diced peel tomatoes
- 1 pkg Fajita Seasoning
- 1 tbsp of salt
In a Dutch oven or heavy duty pan on medium heat cook onion, garlic, celery, and pepper in 1 tbsp. of olive oil until slightly browned. Add mushrooms and cook 1-2 minutes. Add ground turkey and cook until browned. Strain ingredients and return to pot.
Add all the remaining ingredients and simmer for 1 hour.
- Or place all ingredients in the crock pot for 2 to 3 hours on medium then change setting to hold and you can keep it warm all day.
