Southwestern Chipotle Turkey Chili

  • 1 lb ground turkey cooked and strained
  • 3 cloves gloves of garlic (minced.)
  • 1 each green pepper diced
  • 1/2 each cup of celery diced
  • 1 each small red onion chopped
  • 1 cup chopped mushroom
  • 4 oz Chipotle peppers and sauce
  • 11/2 cups chicken stock
  • 1 lg large can diced peel tomatoes
  • 1 pkg Fajita Seasoning
  • 1 tbsp of salt
  1. In a Dutch oven or heavy duty pan on medium heat cook onion, garlic, celery, and pepper in 1 tbsp. of olive oil until slightly browned. Add mushrooms and cook 1-2 minutes. Add ground turkey and cook until browned. Strain ingredients and return to pot.

  2. Add all the remaining ingredients and simmer for 1 hour.

  3. Or place all ingredients in the crock pot for 2 to 3 hours on medium then change setting to hold and you can keep it warm all day.
  4. Serve with sour cream and tortilla chips.

  5. Break down into small serving sizes and refrigerate or freeze for a later meal prep
